2 onions, 1 tbsp olive oil, 2 cups vegetable stock, 1/2 cup heavy cream, 200g pasta, Salt and pepper to taste.
Heat olive oil in a pan, add sliced onions, and cook for about 15 minutes. Stir occasionally, until golden and caramelized.
While the onions cook, boil the pasta in salted water. Drain and set aside.
Once the onions are caramelized, pour in the vegetable broth and simmer for 5 minutes.
Stir in the heavy cream, salt, and pepper. Let the sauce simmer for another 3-5 minutes until it thickens.
Add the cooked pasta to the pan and toss it in the creamy onion sauce. Garnish with fresh coriander, and serve hot!
