Ingredients
- For the Bread Base: 4 slices of white bread (cut into triangles or squares)
- 3 tbsp ghee (for frying)
- For the Sugar Syrup: ½ cup sugar
- ¼ cup water
- 2-3 saffron strands
- ½ tsp cardamom powder
- For the Rabri: 2 cups full-fat milk
- 2 tbsp condensed milk (or 2 tbsp sugar)
- ¼ tsp cardamom powder
- 2 saffron strands (optional)
- 2 tbsp chopped nuts (almonds or pistachios or cashews)
Step By Step Guide
Prepare The Rabri
Heat 2 cups of milk and bring it to a gentle boil. Let it simmer for about 10-15 minutes until it reduces to half the quantity. Then add condensed milk (or sugar), cardamom powder, and saffron strands and stir well. Cook it for approx 5 minutes until the mixture turns thick and creamy.
Make The Sugar Syrup
In another pan mix sugar and water and heat until the sugar dissolves completely. Add cardamom powder and saffron strands for flavor and let it simmer for 2-3 minutes, just make sure the syrup is light and not too sticky.
Fry The Bread
Cut the bread slices into your desired shape, it can be either triangle or square. Heat ghee in a pan and shallow fry the bread slices on medium heat until crispy and golden brown.
Assemble The Shahi Tukda
Dip the fried bread into the syrup making sure it's fully coated but not soggy. Place the bread on a serving plate and pour the rabri generously over the bread slices.
Garnish & Serve
Garnish with chopped nuts and a sprinkle of saffron and serve immediately if you want to enjoy it warm or chill in the refrigerator for a cool creamy dessert.
