Ingredients
- 1½ cups of crushed cookies
- ¼ cup of melted butter
- 2 tablespoons of sugar (optional)
- 2 cups of cream cheese
- ¾ cup of powdered sugar
- 1 teaspoon of vanilla
- ½ cup of sour or heavy cream
- and 2 eggs.
Step By Step Guide
Heat up the oven
Set your oven to 160°C (320°F). Grease a springform pan that is 7 or 8 inches wide.
Make the crust
Combine sugar, melted butter, and crumbled cookies. Push the mixture down hard into the bottom of the pan. Let it cool after baking for 8 to 10 minutes.
Make the Filling
In a big bowl, mix the cream cheese until it is smooth. Mix in the sugar and vanilla thoroughly. Mix in the sour cream. Add the eggs one at a time, mixing them gently after each one to keep them from getting too mixed together.
Put together
Pour the filling over the crust that has cooled. Lightly tap the pan to let air bubbles out.

Bake for 45 to 50 minutes, or until the center is a little jiggly but the edges are firm. Shut off the oven, let the door open a little, and allow the cheesecake cool for an hour inside.
