Ingredients

  • 1 cup of fresh or frozen raspberries

  • 1 ¼ cups of almond milk

  • 2 eggs

  • 2 tbsp of melted butte

  • 1 cup all-purpose flour

  • ½ tsp of lemon juice

  • powdered sugar (for dusting)

  • 1 tsp of vanilla extract

  • 2 tbsp sugar or honey

  • whipped cream

Step By Step Guide

Prepare The Crepe Batter

Take a medium-sized bowl and mix together milk, melted butter, flour, vanilla extract, eggs, and sugar until smooth. Set aside and let the batter rest for about 10-15 minutes.

Cook The Crepes

Now, take a non-stick pan, lightly grease it with butter, and heat it over medium heat. Gently pour in a small amount of batter, spread it evenly, and cook for about 1–2 minutes, or until golden on both sides.

Make The Raspberry Filling

Moving on to the next step, take a saucepan and heat raspberries with lemon juice and sugar or honey over medium-low heat. Stir continuously for about 4–5 minutes until the mixture becomes smooth. Remove from heat and let it cool.

Add Fillings

After completing the above steps, take a crepe and spread a generous amount of the raspberry filling. You can also add some whipped cream for an extra-rich texture.

Fold The Crepes

Moving on to the next step, fold the crepes as per your preference. You can shape them into halves, quarters, or rolls — whichever you like best.

Garnish And Serve

Once you're done with the above steps, drizzle the raspberry sauce over the crepes or dust them with powdered sugar. Your irresistible, mouth-watering dish is ready! You can also top it with fresh raspberries before serving it to your loved ones.
